Cast Wines
The Cast Sauvignon Blanc is exclusively stainless steel fermented at cold temperatures, for up to 100 days. The wine is a chameleon, in that as it opens and warms the aromatic and sensory characteristics change a bit. One can find grapefruit, pineapple, apricot, pear, kiwi, green apple and some honey depending on the serving temperature and how long the bottle has been open. The wine has great acidity but is tempered with a bit of sweetness on the finish to take the edge off and add viscosity to the palate.
